Bourbon Sidra, refined.

Edwin Noreña's Black Honey Sidra focuses on the variety itself, with his classic touch of carbonic maceration and lactic fermentation. The first thing in the cup is the aromatics — pineapple and lavender lift the cup before the sweetness settles in.

Little Waves cupped this Bourbon Sidra in August 2024, loved it, and committed to more after a follow-up visit in November 2025.

This coffee focuses on the variety, Sidra, with his classic touch of black honey.
