The William

Flat burrs, programmable doses.

The William is Lelit's step up from the Fred. Where the Fred runs 38 mm conical burrs, the William runs 64 mm flat burrs. That is a meaningful change. Larger flat burrs produce a tighter particle distribution, which translates to more even extraction at the group. For people pulling a lot of shots or chasing a specific flavor clarity, flat burrs are often the path there.

The William uses Lelit's LCC electronic control system. An OLED graphic display lets you program two separate dose times: one for single shots, one for double shots. The controller remembers both. You press the corresponding button, the grinder runs for the programmed time, and you get the dose you set.

Micro-regulation of grind size happens through a knob with indicated position. You can see exactly where you are and repeat it. An add/stop button lets you manually add more coffee mid-grind or cut a dose short if something goes wrong. A partial and total dose counter tracks how many times the grinder has run.

How it works

Programming the William.

Fill the hopper. Use the OLED display to set your two dose times. One button triggers the single-shot dose, the other triggers the double-shot dose. Start with a reasonable estimate, pull a shot, weigh the dose, and refine the timer until the grinder is dropping exactly the weight you want.

Grind size is adjusted with the knob. Because the position is indicated, you can note your current setting and return to it exactly. Finer for more resistance, coarser for less. The flat burrs give you finer resolution than a conical burr set at the same knob travel.

During grinding, use the add/stop button to fine-tune a dose in real time. Hook your portafilter onto the support pin and let it ride. When the grinder stops, remove the portafilter, tamp, and brew.
