The Bianca V3

A dual boiler you can steer by hand.

Lelit builds the Bianca around the idea that a home machine should give you a lever to pull, not just a button to press. Two boilers handle coffee and steam on separate circuits. The coffee boiler runs at one temperature while the steam boiler runs at another, and neither has to wait for the other to catch up.

The group is an L58E, Lelit's commercial-style head. What makes the Bianca different is the paddle mounted on top of it. As you slide it open, you control how fast water moves through the puck. A slow start lets the grounds wet evenly before pressure ramps up. A full open pours at normal line pressure. A tapered finish backs off at the end. You are shaping the extraction in real time.

The LCC electronic control system sits behind an OLED display. You can set preinfusion time, brew temperature, standby behavior, and a sleepy mode that holds the coffee boiler at 70 C while the steam boiler rests. The walnut paddle, knobs, feet, and portafilter handles are the visual signature. The AISI 304 stainless body is the rest of it.

Two boilers, one paddle, and a grouphead you can actually read.

The water tank is external and sits off the back of the machine. It stays cool because it is physically separated from the heat. If you want to plumb the Bianca directly into a water line, it is built for that too. Direct discharge, water supply input, and an external pump calibration screw are all there.

This is a machine for people who want to see exactly what is happening and change it. It rewards attention. If you grind a touch finer than usual, the paddle gives you room to adjust on the fly instead of walking a new dose to the grinder.

Dual AISI 316L stainless boilers

A 1.5L steam boiler and an 800mL coffee boiler run independently. You get steam and espresso at the same time, held at temperatures you set separately.

L58E group with manual paddle

The paddle on top of the group head controls water flow in real time. Slow open for gentle preinfusion, full open for 9 bar, tapered close to finish. Flow profiling without an add-on kit.

LCC OLED display and programmable logic

The controller lets you set preinfusion time, brewing temperature, purge behavior, Celsius or Fahrenheit, and standby timing per CEI EN 50564. A partial and total dose counter tracks use.

Walnut wood details

Paddle, knobs, lever, adjustable feet, and portafilter handles are turned from walnut. The rest of the body is polished AISI 304 stainless.

Movable external water tank

The 2.5L tank sits apart from the machine body so it stays cool. The Bianca can also be plumbed directly into a water line with direct discharge built in.

Double manometer

One gauge reads pump and water pressure. The other reads steam boiler pressure. Both are backlit.

Anti-burn multidirectional wands

The steam and hot water wands swivel freely and use a cool-touch sleeve. Professional spring-closure taps on both.

Sleepy mode

You can set an idle time that puts the steam boiler to sleep while the coffee boiler holds at 70 C. Wake-up time is roughly 10 minutes.

LELIT58 tool compatibility

The Bianca ships with a bottomless portafilter and a 2-way portafilter, both walnut-handled. Any LELIT58 accessory or IMS filter fits.

How it works

How a paddle changes a shot.

You grind, tamp, and lock the portafilter into the L58E group. Instead of pressing a brew button, you lift the paddle. Water begins moving through the puck at whatever rate you choose. Most shots start with the paddle partially open for 6 to 10 seconds of low-pressure preinfusion. The grounds wet evenly and channeling risk drops.

Then you open the paddle fully. The pump holds at 9 bar and the shot pulls at normal rate. As the extraction nears the end, some baristas taper the paddle back to slow the finish and avoid pulling bitterness from an exhausted puck. Others just close it when the shot looks right.

The OLED display tracks elapsed time and boiler temps while you work. When you finish, close the paddle. The 3-way valve releases pressure and the puck dries into a knock-out cake.

Who the Bianca is for.

The Bianca is for people who want hands-on control over every shot and who are ready to learn what flow profiling actually does to extraction. It is not the simplest machine on this page. It is the most expressive.

If you already understand grind adjustment and dose weight and you want the next axis of control, this is where it lives. The dual boiler also means you can steam for milk drinks without the machine catching up between each one.

The Lelit toolbox

The Bianca uses Lelit's 58mm commercial group. Any LELIT58 filter, portafilter, or accessory works with it. IMS filter baskets in standard 9-11g, 14-18g, and 18-21g doses ship in the box, plus a blind filter for backflushing. A 70L water softener cartridge and a microfiber cloth round out the starter kit.
