The coffee

El Nevado is built from smallholder lots across Huila.

This lot is composed of coffees sourced from multiple smallholder producers across the municipalities of Santa Maria and Pitalito in Huila. Individual lots undergo repeated cupping evaluations at purchasing stations and centralized warehouses prior to aggregation, ensuring consistency in sensory profile and defect control across the final blend.

Decaffeination is carried out by Descafecol in Manizales using a sugarcane-derived ethyl acetate (EA) process. Green coffee is steamed to increase cell permeability, then cycled through EA extraction to remove caffeine. The coffee is re-steamed to remove residual solvent and dried to original moisture content, achieving at least 97% caffeine removal while preserving structural integrity.
