The Vario W+

Flat steel burrs, weight-based dosing, long-term build.

The W in Vario W+ stands for weight. The plus stands for the platform upgrades over the original Vario generation. What you actually get is the Vario chassis, 54mm flat steel burrs instead of ceramic, and an integrated scale that measures grounds to 1/10th of a gram as they fall.

Steel flat burrs produce brighter clarity than ceramic, at a trade-off of slightly faster wear. For filter and pour-over, where top-note clarity matters, many baristas prefer steel. Baratza's own internal testing pushed the W+ toward brew-style brightness, not espresso-syrupy body.

The scale runs the grinder. Program a weight-based dose into one of three preset buttons. Press the button. The grinder starts, the burrs grind, and the scale measures. The motor stops within 1/10th of a gram of your target weight.

The dual macro-micro adjustment is the same philosophy as the Vario+. Ten-plus macro positions for coarse range, twenty-two micro positions per macro step. Two hundred thirty total combinations. 230 microns on the fine end, 1150 microns on the coarse end.

The housing is compact at 4.5 inches wide. The motor runs at 180W, delivering 1.6 to 2.2 grams per second. The LCD screen is readable in dim light and shows preset status, weight target, and timer as needed.

Steel flat burr geometry produces brighter cup clarity than ceramic, with slightly faster wear. Favored for pour-over and filter where top-notes matter. Same 54mm size as the Vario+ and Forte.

How it works

How the W+ handles a dose.

Place your portafilter or cup on the scale platform under the spout. The scale tares automatically.

Select a weight-based preset, or set a target weight on the front panel. Press start.

The motor begins grinding, the scale measures the grounds as they accumulate in your vessel, and the grinder's firmware predicts remaining time. It slows and stops within 1/10th of a gram of your target. No stopwatch, no separate scale.
