The Vario+

Flat ceramic burrs, tuned across the whole range.

The Vario+ is where Baratza moves from conical to flat burrs. Fifty-four millimeters across, ceramic, spinning at 1350 RPM. Flat burrs excel at uniform particle distribution across the grind range. Ceramic stays cool and holds its edge over thousands of grinding hours.

The adjustment system is dual-stepped. Ten macro positions on one ring handle the coarse range, Turkish-fine through French press coarse. Up to twenty-two micro positions per macro step let you dial in inside each range. Over two hundred twenty total combinations.

The Vario+ was engineered for baristas who wanted commercial-class grinding consistency in a home footprint. The chassis is compact. The noise profile is moderate. The repeatability is where the price lives.

Flat ceramic burrs, 220 stops, and presets that remember what works.

A LCD screen shows your current preset and timer status. Three programmable buttons save timed doses to the tenth of a second. For the home barista switching between espresso and filter through the week, this is the interface that makes the switch painless.

Included with the grinder is a 58mm metal portafilter holder. Grind directly into your basket, no dosing cup necessary. The grounds bin seats separately for filter duty.

Eight things to know

What the Vario+ brings to the counter.

01

54mm flat ceramic burrs

Larger surface area and flatter geometry than conical burrs mean more uniform particle distribution across the grind range. Ceramic runs cooler than steel and holds its edge for thousands of grinding hours.

02

220-step macro and micro adjustment

Ten macro positions on one ring for coarse range control. Up to 22 micro positions per macro step for fine-tune. Over 220 total combinations, from Turkish-fine espresso to French press coarse.

03

1350 RPM motor

Faster burr speed than the Encore or Virtuoso, suited to the flat burr geometry. Grinds at 1.6 to 2.2 grams per second. 110V operation, DC motor with gear reduction.

04

LCD screen with three programmable presets

Save three timed doses to 1/10th-second precision. Three buttons on the front panel recall each one. Switch between espresso, drip, and pour-over without resetting the timer.

05

58mm metal portafilter holder

Included in the box. Swings under the spout to hold a commercial-standard 58mm portafilter. Grind directly into the basket, no transfer step.

06

Removable grounds bin

180-gram bin seats separately for filter brewing. Swap between portafilter and bin in seconds.

07

Serviceable architecture

Parts are available direct from Baratza. Burrs, motor components, adjustment mechanisms, and electronics are all replaceable. Standard Baratza repair philosophy.

08

Compact footprint

5.1 inches wide, 7 inches deep, 14.1 inches tall. Fits under cabinets with the hopper on. Nine-pound weight keeps it planted.

How it works

How the Vario+ works.

Choose your macro step on the right-side ring. Ten positions, spanning Turkish-fine to French press-coarse. This is your grind region.

Dial in the micro adjustment on the left-side ring. Up to twenty-two positions per macro step. This is where espresso gets tuned and pour-over gets refined.

Store a timed dose to one of three preset buttons on the front. Press the preset, swing the 58mm portafilter or the grounds bin under the spout, and walk away. The timer resolves to 1/10th of a second for repeatable morning workflow.

Who it's for

Who the Vario+ is for.

The home barista who pulls espresso and brews filter, both, and wants one grinder that handles each without compromise. The subscriber who has outgrown the Encore line and wants flat burr precision without moving to the Forte commercial class. The serious enthusiast who will use the 220 adjustment stops.

If you want weight-based dosing with an integrated scale, the Vario W+ is the step up. If you only brew filter, the Virtuoso+ offers a simpler interface at lower cost.

Step into flat burrs.

The bridge from conical to commercial.

The Vario+ bridges the Baratza lineup from the conical Encore and Virtuoso family to the flat-burr Forté commercial grinders. The 54mm flat burr geometry is shared with the Vario W+ and the Forté AP. Parts, burr sets, and repair practices carry across the flat-burr line.
